As many of you know Italys shape reminds that of a boot. PIZZIUM’s travel is nothing but a culinary journey of Neapolitan Pizza along the Boot, to discover flavours of the Italian tradition.
Aside from the classics like Margherita, Marinara and Bufala, the Menu suggests special pizzas that are dedicated to traditions, recipes, ingredients and products of the Italian Regions.
An explosion of flavours that comes from a careful selection of regional PDO and PGI excellence from local producers.
The unique dough paste from PIZZIUM is obtained thanks to a blend of 3 00-flours with different protein contents and different strength index.
Our artisans define it as an “intelligent dough” as it is always evolving and in discussion, an evergreen, without losing its simple identity from its origins.
It has a minimum leavening time of 24hours both at room temperature and controlled temperature, so as to allow all sugars to be divided correctly and pizza is rightly so digestible. The dough base of one pizza weighs 250g.
